Coconut, Blueberry, Banana, Macadamia Nut Mini-Muffins

My little boy has allergies to cow dairy products and gluten, so not wanting him to miss out, I created this gluten-free, dairy-free, vegan, sugarless mini-muffin recipe by taking and adding from a few different recipes.

It was my first time experimenting making muffins, and besides over cooking the first batch a little too much, these turned out surprisingly well; being super moist and really delicious. I am very proud of myself!

Brussel Sprouts baked with Capers and Miso

Far Out Brussel Sprout! Growing up as a child Brussel Sprouts were probably one of the WORST things that I could ever think to eat, and I feel like the feeling was mutual among other children my age. Fast forward 20 or so years and now it one of my favorite vegetables ever.

Brussel Sprouts are low in cholesterol and saturated fat, being a great source of Vitamins B6, K, C & A! I love you little green Brussel Sprouts!! Not to mention Folate (great for if you are trying to get pregnant or are pregnant by the way), as well as Potassium, Iron, Riboflavin, Phosphorus, Dietary Fiber and Manganese.

Roasted Cauliflower Soup garnished with Kalamata Olives

I love cauliflower, it is absolutely one of my favorite foods on the planet. I love it roasted, as a salad and mashed just like potatoes. I have always wondered about making it as a base for a soup and this week while on the Treehugger Website I saw a recipe for “Roasted Cauliflower Soup with Aged Cheddar” and it got me thinking…..

Butter Bean Dish with olive oil, sage, rosemary and dried chillies

It is said that people either LOVE or HATE Lima Beans AKA Butter Beans. I am definitely a lover of Lima Beans. They are a great source of protein, and as my Son and I do not eat animals, this is a great plus for us to incorporate them into our diet. Lima Beans are also high in calcium and manganese which helps to maintain healthy strong bones. They give you energy, are high in iron (another plus if you do not eat meat), are low in calories and almost fat-free. Want more inspiration? Butter beans are high in fiber and bind with the bile acids in ones’s body thus lowering your cholesterol, this happens when the two leave together exiting the body. Lima Beans also help keep you regular by aiding your digestive tract.

Getting my Juice on AGAIN, and the benefits one (that is you) can obtain!

Last week, after being fed up with the way I was feeling physically, I decided to do another juice cleanse. The holidays – Thanksgiving through New Years are tough as far as all the foods on offer – and I was feeling sluggish, bloated and just unhealthy! I needed a kickstart to be better with my routines, and not eating for a few days really helps me to take the time to be still, reflect and focus. This cleanse was the third one that I have done in the last ten months! Obviously, I am a big fan of juicing. I love the benefits and the way I feel doing it. I also like the discipline of making a decision and sticking to it.

Miles Storm’s journey with becoming Eczema Free

Six months ago, my then 1.5 year old Son & I made the long journey back to my home town of Melbourne Australia to celebrate my Mum’s birthday. We visited for 3 weeks, and while we were there Miles Storm developed a scaly rash all over his body and face. I really did not think anything of it at the time. I figured it was dry skin due to the climate change and would eventually clear up.

The Blueprint Cleanse, oh how I love you!

A few months ago, while Miles Storm and I were out and about in Williamsburg Brooklyn I stumbled upon a bottle of Blue Print Cleanse’s freshly pressed organic Cashew Nut, Agave, Vanilla and Cinnamon drink (AKA known as White Juice). It was amazing and we both fought over the last drop…. seriously! I took a photo of that moment and put it up through the Willy B Mum twitter feed tagging Blue Print Cleanse on it.

Roasted Sweet Potato & Garlic Hummus

We eat a lot of chickpeas (garbanzo beans) in our house. We bake them, put them in salads, make soup and create the traditional yummy Middle Eastern dish – hummus. Hummus is basically a concoction of olive oil, lemon, chickpeas, sesame tahini and garlic, and is supposedly one of the oldest dishes dating back to Egypt 7000 years ago!
