Strawberry, Spinach, Toasted Cashew Nut & Avocado Salad Yummy!

We always have so much produce in our refrigerator at home, and although my family eats an abundance of fruits and vegetables it is, at times, challenging to eat everything before it goes bad.

Amazing Vegetable Soup, perfect for a Little One with an ear-ache

A few days ago we realized Miles Storm was not feeling well, and when we checked his temperature it was just over 102 (poor little guy). We took him straight to the ER at the local Northern Dutchess Hospital where we were for 3 hours waiting to see what was wrong with him. He just laid there on the bed as limp as limp, which was so heart breaking to see. It ended up, that he had a bad ear infection which we assume he developed because he had been in the pool the day before. My Son participates in swimming lessons at an amazing school in Brooklyn called Aqua Beba. He is already swimming under water so he had spent most of the time in the pool with his head submerged.

Why Miles Storm cannot eat Gluten – Sweet Potato & Carrot with Brown Rice Pasta.

My 22 month-old Son is going through a phase where he loves Pasta. He walks around the apartment saying “Pasta Pasta” in the cutest baby voice a Mum has ever heard. As I am on a “Cooking Roll” this week, today for lunch I made him Sweet Potato & Carrot Sauce with Gluten- Free Brown Rice Pasta. He loved it!

Raw Juicing is the Way to Go

I love to juice fresh raw organic fruits, herbs and vegetables. During the winter months I do not do it so much but during the warmer part of the year when our vegetable garden upstate is blooming, I juice a lot! It is a great way to get your daily dosage of fruit and veggies right off the bat and a wonderful way to start the day. I like to throw whatever produce we have in the house into the Juicer (including scraps like apple cores and kale stalks), and hope for the best! For my little boy I have to be more predictable like giving him mango or carrot juiceā€¦ you know, keep it simple or else he will not drink it.
