A “Whoopie Pie” is an American Desert, well to be specific it is more of a North Eastern American thing, consisting of a frosty filling smothered between 2 mounds of (traditionally) chocolate cake. Sounds delicious I know. However, usually Whoopie Pies are made with dairy products. Milk and Eggs in the cake mixture, and of course the filling is usually dairy-based as well. Definitely not vegan friendly.
My little boy has allergies to cow dairy products and gluten, so not wanting him to miss out, I created this gluten-free, dairy-free, vegan, sugarless mini-muffin recipe by taking and adding from a few different recipes.
It was my first time experimenting making muffins, and besides over cooking the first batch a little too much, these turned out surprisingly well; being super moist and really delicious. I am very proud of myself!
Six months ago, my then 1.5 year old Son & I made the long journey back to my home town of Melbourne Australia to celebrate my Mum’s birthday. We visited for 3 weeks, and while we were there Miles Storm developed a scaly rash all over his body and face. I really did not think anything of it at the time. I figured it was dry skin due to the climate change and would eventually clear up.
